The pig's ear has a cartilaginous part and a soft part that gives it a texture, almost gelatinous, that for some at first it may be difficult to assimilate. However, that soft crunchy touch is what makes it different and interesting. We are used to ordering fried pork ear in tapas bars, but if you have never tried it a la Gallega and you have the possibility to do so, be sure to taste the cooked pork ear with a touch of good paprika and a good oil made of olives.
