Grapes selected from wines with an average age of 30 years to make the most contemporary and timeless Montecillo wine. Each variety is fermented separately in steel tanks at a controlled temperature of 26ºC.
The must remains in contact with the skins for 20 days to obtain the desired extraction of color and aromas. It then undergoes malolactic fermentation in underground cement tanks. Subsequently, it is racked into new French oak and mixed wood barrels –with staves of French and American oak interspersed–, where the aging lasts 26 months.
In the last barrel racking, the two varietals are assembled. The last two months of aging it ages as a single wine. After that, the wine is refined in the bottle for at least 18 months before its release on the market. It is a very bright, intense cherry red color with a high robe, with even purple reflections. On the nose it is powerful with fruity notes such as black plums, blackberries and hints of vanilla. In the mouth it is unctuous and enveloping. Pure harmony and explosion of flavors with a long finish.
